Last month, I tried a new recipe with something I’ve been willing to try for so long: Quinoa. I came across with quinoa in Pinterest. There were plenty of different recipes with quinoa and they were all looking delicious! So I tried kind of my own recipe.
• 2 Cups of Quinoa
• 3 Cups Of Hot Water
• 1 Onion
• 2 Tbsp Red Pepper Paste
• 6 Cups of Uncooked Spinach
• Salt and Pepper
Put the quinoa in a medium sized saucepan with the water and cook for 15-20 minutes until the water is absorbed and the quinoa is tender.
When the quinoa is done, add pepper paste and stir.
In another pan, cook chopped onions with a little oil ( I prefer “nut oil”) and salt, until they are soft.
Add spinach and stir a few times until they are wilted.
Add spinach to quinoa and season with pepper and serve :)
