Week 43: 23-29 October  Keep calm and eat your lunch

My new obsession is wraps. I mean “vegan wraps”. I’ll write about my “veganning” later but these wraps really deserve praise. They are delicious. You can try not-vegan versions but trust me these cruelty free ones are yummy. So here’s what I used; whole wheat tortilla, vegan mayonnaise, I also add the purée I made with carrot, potatoes, onion, garlic and cashew. And it’s also super delicious. Then add whatever you want. My version has sauteed mushroom, carrot, brocoli, onion and red pepper. I made the final touch with some vegan cheese. After you wrap it which I’m not very good at it, toast it with a little oil in the pan you used to sauté the veggies just to make it crunchy. Perfect lunch for me!
