Vegan Brownies

To tell the truth, this was my second attempt to bake vegan brownies. The first one was a disaster, ended in the bin… So I decided to try another version and it turned out great. It’s soft, fudgy, creamy and moist and it’s cruelty-free. Next time I’ll double the ingredients and I think the amount of red beans could be a little more like 250 or 260 grams if you want a more firm brownie. 


220 grams red beans 50 gram cocoa powder 75 grams sugar 45 ml oil 60 ml soy milk 2 grams baking powder 40 grams chocolate chips   A pinch of salt  2 Tbsp peanut butter

Preheat oven to 180 C   Mix the chia seeds with 6 tbsp of water  Combine all ingredients except chocolate chips in a food processor  Blend until completely smooth and creamy  Spread the batter evenly into the pan  Tuck chocolate chips one by one  Add peanut butter on the top of batter and swirl with a fork  Bake for 25-30 minutes (it’s up to your oven)
