To tell the truth, this was my second attempt to bake vegan brownies. The first one was a disaster, ended in the bin… So I decided to try another version and it turned out great. It’s soft, fudgy, creamy and moist and it’s cruelty-free. Next time I’ll double the ingredients and I think the amount of red beans could be a little more like 250 or 260 grams if you want a more firm brownie.
Ingredients:
220 grams red beans ∇ 50 gram cocoa powder ∇ 75 grams sugar ∇ 45 ml oil ∇ 60 ml soy milk ∇ 2 grams baking powder ∇ 40 grams chocolate chips ∇ A pinch of salt ∇ 2 Tbsp peanut butter
Preheat oven to 180 C ∇ Mix the chia seeds with 6 tbsp of water ∇ Combine all ingredients except chocolate chips in a food processor ∇ Blend until completely smooth and creamy ∇ Spread the batter evenly into the pan ∇ Tuck chocolate chips one by one ∇ Add peanut butter on the top of batter and swirl with a fork ∇ Bake for 25-30 minutes (it’s up to your oven)
